Mommy Group 9/25/13

Cream Cheese Chicken

3-4 chicken breasts
1 can drained and washed black beans
1 can drained corn
1 can worth (use an empty can from the corn or beans and fill it) Salsa
1 8oz cream cheese

Add all to crock pot.  Cook on low 5-6 hours.  Shred chicken after 4 hours.  Serve with rice, cheese, and sour cream.  

We usually serve it burrito style, but Matt got the last tortillas since I forgot to get them when I was at the store.  However, the tortilla chips worked great!

Mommy Group 9/18/13

Another fun night!  Sorry about eve's irrational behavior; turns out she had one tooth cut through, another one pull a fake out, an 4 of her molars are swollen to the point you can see it. Poor dude. So, sorry about all the screaming. :p

Anyway, it was really a very fun night!  We had some super cute sister missionaries over for dinner just before mommy group, so dinner was a little bit different. I didn't get the original picture, but I can attest to it's yumminess!

Creamy Tomato Chicken Pasta
So, here's the original recipe.

3-4 Large Chicken Breasts (about 1-1.5lbs)
28oz can crushed tomatoes (I crushed a quart of home-canned tomatoes.  That's about 32oz instead of 28, but it worked great.)
14oz can fire roasted tomatoes
16 oz bag frozen corn (I used a can)
8oz cream cheese
1 cup of milk
1 tsp salt
1 tsp pepper

Add all ingredients in the crock pot. Set 4-6hrs on high.
Stir a few times throughout cook cycle.*
After 4 hours, shred chicken with two forks and mix well.
Serve over pasta of choice.
 
This was very delicious!   However, in an attempt to make it go farther, and with the wonderful generosity of Maria, we added a zucchini, a green pepper, and an onion.  This was still a very delicious dish!  It really added a different flavor to it all around, but it was still very scrumptious.  Thanks Maria!  And thanks to Hayley who did a fabulous job sauteing them!  They were perfect.

Our Top 10 Toddler Foods

Now, before we start, please note that these are for our kids who are over 12 months old. They do not have any allergies to foods, so please make sure to watch for allergic reactions and always follow guidelines presented by your pediatrician. Foods such as dairy, eggs, and peanut butter should be held off until child is at least 12 months old. 

And on to the list!

10- Frozen fruits and veggies. This is for our teething friends. Frozen foods, mostly grapes or peas, give a nice cooling to the gums while still being yummy and nutritious. 

9- Food Pouches. You can get these at the grocery store where Gerber is sold. There are often many brands and varieties, including some that are organic. If you don't want to buy them, these are basically smoothies or baby food in a squeeze bottle. Make your own!

8- Quesadillas. Sounds funny, right? These simple tortillas with cheese are easy to hold and yummy to eat. They are also quick and easy to make. Grilled cheese sandwiches works well too. 

7- Olives. What kid doesn't like these? If nothing else, they are fun to eat!  Haven't met a kid yet who didn't like olives. 

6- Peanut Butter and Jelly. Not something commonly thought of, but surprisingly effective. Beware though, crust, although nutritious, is a little hard to chew without molars. With more teeth they will be better at eating the crust, but for now, don't worry too much if you have to take off the crust to get them to eat more.  

5- Cut Fruit. Specifically bananas. Fruit is sweet and tasty, healthy and fast for mommy. Berries also work great!

4- Cheerios. This tasty cereals is easy to pick up and has a sweet taste. I decided to compare the original Honey Nut Cheerios to the Malt'O'Meal version. Surprisingly, the Malt'O'Meal version was larger, more flavorful, and much cheaper. Malt'O'Meal all the way!

3- Goldfish Cheese Crackers. Or other cheese crackers. Surprisingly, the cheese crackers beat out the Cheerios. Not sure why, but by a small amount, they did. 

2- Pasta. Many moms recommend using the mini pasta such as mini bowtie pastas. These foods taste great and make the kids feel like big kids. Beware though, when they get a taste of the complex adult foods, it's adios baby food! 

And Finally...

1- Cheese!  From the moms that I talked to, cheese cubes and cheese sticks (string cheese) are the number one food item that toddlers love to eat.  No real rhyme or reason, they just love it!


Alrighty!  Now, along with this list, there are a few other food suggestions we have. 

- Ritz crackers do NOT make good toddler foods... Unless you want to clean up a lot!  Kids more often will not eat them, but simply enjoy crushing them between their fingers. These crumbly crackers are just one big mess. 

- After your kids get a taste of complex foods and variety, they don't like to go back to simple. So, if you've got cereals, crackers, or other kid snacks that they will only eat occasionally, make a mix! Put them all together with yogurt dots and raisins and mix it all up. This will also help with the guessing game of "what food do you actually want today?"

- If you have a hard time getting kids to eat meat, remember that there are other ways to get protein. Try some peanut butter or scrambled eggs!

- Need more fruit in their diet but don't want to take fresh fruit on road trip or to an event? Take dried fruit instead. The same nutrition, and the same sweet taste, without the accidental mess in your bag!

Mommy Group 7/24/13

Sorry, I can't figure out what I did that made this one come to the start, but this is a good one anyway.  If you know how to send a post back in the timeline, please let me know.

For Mommy Group last night, we had homemade pizza!

For the kids, we started with a basic cheese pizza

I just used a premade pillsberry pizza crust dough
Covered with a can of tomato sauce
And then covered with "pizza cheese"
I also added a bit of extra mozzarella cheese because I like it extra cheesey
Cook to crust specifications. 

And moving on to the grown ups...

Spinach Artichoke Alfredo Pizza


Again, starting with pillsberry pizza crust
Alfredo sauce:
Begin by making a roux,
Melt 1/4 cup butter in a saucepan
Slowly stir in 1/4 cup flour

Slowly add milk a little at a time until it reaches the desired consistency (I made it a little thicker than I would have for pasta since I was putting it on pizza)
Add Parmesan and mozzarella to taste
Finish off taste adjustment with garlic salt and pepper
Spread on pizza
Top with pizza cheese (with extra mozzarella and Parmesan), spinach and artichoke hearts
Cook according to crust specifications
Note: this pizza takes a bit extra time for this pizza since the sauce is more soupy.

And for dessert
Lisa's Oatmeal Chocolate Chip Cookies

2 cups butter
2 cups sugar
2 cups brown sugar
4 eggs 
2 tsp vanilla
4 1/2 cups flour
4 1/2 cups oatmeal
1 tsp salt
2 tsp baking powder
2 tsp baking soda

Bake at 350 for 6 minutes. Note: yields 112 cookies

Although there were only a few of us, due to the holiday, it was a great night!

Creamy Slow Cooker Tortellini Soup

4 cups white sauce (you can buy dry packets for this or make your own with a roux. For instructions on a roux, click here.)
1 can veggie broth (I use chicken instead because that's what I always have on hand.)
1 1/2 cups sliced mushrooms
1/2 cup chopped onion
3 cloves minced garlic
1/2 tsp dried basil
1/4 tsp salt
1/4 tsp oregano
1/8 tsp cayenne pepper

Mix all above in crock pot.  Cover and cook on low 5-6 hours or high for 2 1/2-3 hours.

Add 7-8 oz pkg dried cheese tortellini.  (I like to add a little extra because I can't seem to find this size pkg and I also like to have a little more "meat" in my soup.  I add at least a 9-10 oz pkg.)
Cook on low for 1 hour or high for 45 minutes.

Add the following:
1 12 oz can of evaporated milk
6 cups fresh spinach (I forgot this one when I was at the store, so my soup didn't have any, but I think it would still taste great.)
ground black pepper to taste
Parmesan cheese to taste

the original pin says that it makes 4 servings, but this is so yummy, that one batch is only really enough for maybe 3 adults.  If you double the batch, however, be prepared for a VERY full crock pot.  Yummy, yummy, yummy!

Evangeline's Birthday Party

What a great day! Thanks to all who came and those who supported from a far. :) Evangeline had a cute little Monster Party, but she started the day with pancakes!

Yes, it was not planned for it to go sideways, but it was cute enough I don't want to try to make another. :)
