Anyway, on to dinner!
Quesadilla Casserole
1 lb ground need (I used chicken because I didn't have time to defrost the beef, still worked great.)
1/2 cup chopped onion
16 oz tomato sauce
1 can black beans, drained and rinsed
1 can whole kernel corn, drained
1 can green chilies, undrained
2 tsp chili powder
1 tsp ground cumin
1 tsp dried minced garlic (I seasoned to taste with garlic powder)
1/2 tsp oregano
1/2 tsp crushed red pepper
6 flour tortillas, 8 inch (I had the 10 inch since that's what I had and they worked just as well)
2 cups shredded cheddar cheese
Brown beef and onions on medium heat. Add tomato sauce, beans, corn, and green chilies. Mix well. Add all spices, except red pepper. Bring to a boil, lower heat and simmer about 5 minutes. Then add red pepper. (I just added everything at the same time and just brought it to a low simmer).
Spray 9x13 with Pam. Spread 1/2 cup of mixture on bottom. Place 2 tortillas on that. Spread with 1/2 of remaining mixture. Spread with cheese. Repeat tortilla, mixture, cheese, tortilla, then top with cheese to taste. (I also think you could add sliced olives on top for looks, but I ran out of time).
Bake 350 degrees for 15 minutes.
Yum yum yummy. A lot like Mexican pizza in a casserole dish. :)
