For Mommy Group last night, we had homemade pizza!
For the kids, we started with a basic cheese pizza
I just used a premade pillsberry pizza crust dough
Covered with a can of tomato sauce
And then covered with "pizza cheese"
I also added a bit of extra mozzarella cheese because I like it extra cheesey
Cook to crust specifications.
And moving on to the grown ups...
Spinach Artichoke Alfredo Pizza
Again, starting with pillsberry pizza crust
Alfredo sauce:
Begin by making a roux,
Melt 1/4 cup butter in a saucepan
Slowly stir in 1/4 cup flour
Slowly add milk a little at a time until it reaches the desired consistency (I made it a little thicker than I would have for pasta since I was putting it on pizza)
Add Parmesan and mozzarella to taste
Finish off taste adjustment with garlic salt and pepper
Spread on pizza
Top with pizza cheese (with extra mozzarella and Parmesan), spinach and artichoke hearts
Cook according to crust specifications
Note: this pizza takes a bit extra time for this pizza since the sauce is more soupy.
And for dessert
Lisa's Oatmeal Chocolate Chip Cookies
2 cups butter
2 cups sugar
2 cups brown sugar
4 eggs
2 tsp vanilla
4 1/2 cups flour
4 1/2 cups oatmeal
1 tsp salt
2 tsp baking powder
2 tsp baking soda
Bake at 350 for 6 minutes. Note: yields 112 cookies
Although there were only a few of us, due to the holiday, it was a great night!
